Ingredients
- 2 medium zucchinis
- 1 lemon (zested & juiced)
- 1 clove garlic (finely chopped)
- ½ cup fresh basil leaves (sliced)
- ½ cup shaved parmesan
- ¼ cup toasted pistachios (roughly chopped)
- 2–3 tablespoons extra virgin olive oil
- Kosher salt & black pepper (to season)
Instructions
- Trim the ends off the zucchinis and use a vegetable peeler to create thin ribbons. Transfer to a large bowl.
- Add lemon zest and juice, garlic, basil, parmesan, pistachios, and olive oil to the bowl.
- Season with kosher salt and black pepper to taste. Gently toss the ingredients together while keeping the ribbons intact.
- Serve immediately, garnished with additional basil and parmesan if desired.
