Instructions

  1. Marinate the beef: Combine beef medallions, ½ cup apple cider, garlic, thyme, salt, and pepper in a bowl. Let it marinate for at least 30 minutes.
  2. Cook sweet potatoes: Boil salted water in a large pot, add cubed sweet potatoes, and cook until tender (15-20 minutes). Drain and return to pot.
  3. Sear the beef: Heat olive oil in a skillet over medium-high heat. Remove beef from marinade (reserve liquid), sear for 3-4 minutes per side until browned, then set aside.
  4. Sauté onions: In the same skillet, add sliced onion; sauté for about 3-4 minutes until softened.

  6. Finish cooking beef: Return beef to skillet; cover and cook for an additional 10-15 minutes until cooked through.
  7. Prepare mashed sweet potatoes: Add butter, milk or cream, salt, and cinnamon to drained sweet potatoes, then mash until smooth.
