Ingredients

  • 150 g granulated sugar (for apples)
  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 600 ml milk (whole, skimmed, lactose-free, or vegetable)
  • 50 g granulated sugar (for custard)
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Peel and slice the apples into thin rounds. In a bowl, mix them with 150 g of sugar and salt. Let sit for 30 minutes.
  2. Cook the apple mixture in a saucepan over medium heat until softened. Allow to cool.
  3. In another bowl, whisk together egg yolks, 50 g sugar, and salt. Heat milk until just below boiling; gradually add it to the egg mixture while whisking.
  4. Return the mixture to low heat and stir in cornstarch mixed with water until thickened. Remove from heat and stir in vanilla bean paste.
  5. Layer half of the cooked apples in a baking mold, pour half of the custard over them, add remaining apples, then top with leftover custard.
  6. Chill for at least an hour before serving.
