- 150 g granulated sugar (for apples)
- 2 kg apples (Fuji, Royal Gala, or Pink Lady)
- 1 tsp salt
- 1 tbsp cornstarch
- 4 egg yolks
- 600 ml milk (whole, skimmed, lactose-free, or vegetable)
- 50 g granulated sugar (for custard)
- 1/4 tsp salt
- 2 tsp vanilla bean paste
Instructions
- Peel and slice the apples into thin rounds. In a bowl, mix them with 150 g of sugar and salt. Let sit for 30 minutes.
- Cook the apple mixture in a saucepan over medium heat until softened. Allow to cool.
- In another bowl, whisk together egg yolks, 50 g sugar, and salt. Heat milk until just below boiling; gradually add it to the egg mixture while whisking.
- Return the mixture to low heat and stir in cornstarch mixed with water until thickened. Remove from heat and stir in vanilla bean paste.
- Layer half of the cooked apples in a baking mold, pour half of the custard over them, add remaining apples, then top with leftover custard.
- Chill for at least an hour before serving.
