  • 1 large carrot (julienned)
  • 5 radishes (sliced)
  • 3 cups red cabbage (thinly sliced)
  • 10g cilantro
  • 23 green onions (sliced)
  • 2 tbsp chunky peanut butter
  • 1 tbsp honey
  • 4 tbsp soy sauce
  • 2 tsp Sriracha sauce

Instructions

  1. Cook the egg noodles according to package instructions until al dente.
  2. While noodles cook, mix peanut butter, honey, soy sauce, sesame oil, rice vinegar, Sriracha, ginger, and garlic in a small bowl to create the dressing.
  3. Once cooked, drain the noodles and combine them with the dressing in a large bowl while still warm.
  4. Allow noodles to cool to room temperature before adding sliced vegetables: red cabbage, carrots, radishes, cilantro, and green onions.
