Ingredients

  • ripe avocado, mashed or sliced
  • 56 cherry tomatoes, quartered
  • 1 tsp fresh chopped mint or parsley
  • 1 tsp sesame seeds
  • Salt & freshly cracked black pepper to taste
  • Optional: a dash of lemon juice or olive oil

Instructions

  1. Boil the eggs in water for exactly 7 minutes. Cool under cold water before peeling and slicing.
  2. Mash or slice the avocado into your serving bowl. Season lightly with salt and pepper, adding lemon juice if desired.
  3. In a mixing bowl, toss quartered cherry tomatoes with fresh herbs and a pinch of salt.
  4. Assemble by arranging the avocado on one side of the bowl, egg slices next to it, and the tomato mixture on top. Sprinkle with sesame seeds and black pepper.
