Ingredients
- 2 soft- or medium-boiled eggs
- ripe avocado, mashed or sliced
- 56 cherry tomatoes, quartered
- 1 tsp fresh chopped mint or parsley
- 1 tsp sesame seeds
- Salt & freshly cracked black pepper to taste
- Optional: a dash of lemon juice or olive oil
Instructions
- Boil the eggs in water for exactly 7 minutes. Cool under cold water before peeling and slicing.
- Mash or slice the avocado into your serving bowl. Season lightly with salt and pepper, adding lemon juice if desired.
- In a mixing bowl, toss quartered cherry tomatoes with fresh herbs and a pinch of salt.
- Assemble by arranging the avocado on one side of the bowl, egg slices next to it, and the tomato mixture on top. Sprinkle with sesame seeds and black pepper.
