Ingredients
- 2 slices whole grain or rye bread
- 1 ripe avocado
- 2 eggs
- 1 tsp olive oil or butter
- Pinch of dried parsley or chives (for garnish)
- Salt & pepper to taste
- 1 cup strong brewed coffee or espresso, cooled
- 1 cup milk of choice (dairy or plant-based)
- Ice cubes
Instructions
- Toast the bread slices until golden and crisp.
- Mash the avocado with a pinch of salt and pepper, then spread it evenly over each toast slice.
- Heat olive oil or butter in a skillet over medium heat. Crack in the eggs and cook sunny-side-up until whites are set but yolks remain runny.
- Assemble by placing one egg on each slice of avocado toast and garnishing with dried parsley or chives.
- For the iced latte, fill a glass with ice, pour in milk, then slowly add cooled coffee or espresso. Sweeten if desired.
- Serve immediately and enjoy!
