- 3 medium overripe bananas, mashed

Instructions
- Preheat your oven to 425°F and prepare your bread pan with non-stick spray.
- In a mixing bowl, combine gluten-free flour, baking soda, and salt.
- In another bowl, whisk together sugar, eggs, canola oil, and almond extract. Stir in mashed bananas until combined.
- Gradually mix dry ingredients into wet until just blended; fold in chocolate chips.
- Pour batter into the prepared pan and optionally top with more chocolate chips.
- Bake at 425°F for 8 minutes, then lower to 350°F and bake for an additional 50-60 minutes. Check doneness with a knife.
