- 1 center-cut beef tenderloin roast (4 to 4 ½ pounds, trimmed and tied)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons avocado oil
- 6 tablespoons softened butter
- 6 garlic cloves (minced)
- 1 teaspoon finely chopped fresh rosemary leaves
- 1 teaspoon finely chopped fresh thyme leaves
Instructions
- Allow the beef tenderloin to come to room temperature for 1 to 2 hours before cooking.
- In a small bowl, combine softened butter, minced garlic, rosemary, and thyme.
- Preheat your oven to 425°F (220°C). Trim fat from the beef and tie it securely if necessary.
- Season the beef generously with kosher salt and black pepper.
- Heat avocado oil in a cast-iron pan over medium-high heat and sear the beef on all sides until golden brown (about 10 minutes).
- Spread the herb butter mixture over the top of the seared beef, then transfer the pan to the oven.
- Roast for 15 to 20 minutes or until desired doneness is reached (use a meat thermometer).
- Let the roast rest for 10 to 15 minutes before slicing into thick pieces.
