Ingredients
- 2 cups all-purpose flour
- 1.5 tsp baking powder
- 1.5 tsp baking soda
- 1 cup granulated sugar
- 2/3 cup light brown sugar
- 1 tsp salt
- 3 large eggs, ideally room temp
- ⅔ cup vegetable oil
- 1/3 cup buttermilk (mix of whole milk and vinegar)
- 1 cup sour cream
- 3/4 cup cocoa powder, Dutch Processed preferred
- 2 tsp instant coffee
- 3/4 cup boiling water
- 300g dark chocolate (for frosting)
- 3 tbsp corn syrup
- 8 oz cream cheese, room temperature
- 1/3 cup cocoa powder
- 1 cup powdered sugar
- 1/4 tsp salt
- 1 1/4 cup heavy cream, chilled
Instructions
- Preheat the oven to 350°F (175°C) and grease your baking pan(s).
- In one bowl, mix the flour, sugars, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, vegetable oil, buttermilk mixture, sour cream, and instant coffee.
- Combine wet and dry ingredients until just mixed; carefully stir in boiling water.
- Pour batter into prepared pan(s) and bake for about 30 minutes until a toothpick comes out clean.
- For the frosting, melt dark chocolate and combine with cream cheese, corn syrup, cocoa powder, powdered sugar, and salt until smooth.
- Frost cooled cake layers as desired.
