  • 1 cup granulated sugar
  • 2/3 cup light brown sugar
  • 1 tsp salt
  • 3 large eggs, ideally room temp
  • ⅔ cup vegetable oil
  • 1/3 cup buttermilk (mix of whole milk and vinegar)
  • 1 cup sour cream
  • 3/4 cup cocoa powder, Dutch Processed preferred
  • 2 tsp instant coffee
  • 3/4 cup boiling water
  • 300g dark chocolate (for frosting)
  • 3 tbsp corn syrup
  • 8 oz cream cheese, room temperature
  • 1/3 cup cocoa powder
  • 1 cup powdered sugar
  • 1/4 tsp salt
  • 1 1/4 cup heavy cream, chilled

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking pan(s).
  2. In one bowl, mix the flour, sugars, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, vegetable oil, buttermilk mixture, sour cream, and instant coffee.
  4. Combine wet and dry ingredients until just mixed; carefully stir in boiling water.
  5. Pour batter into prepared pan(s) and bake for about 30 minutes until a toothpick comes out clean.
  6. For the frosting, melt dark chocolate and combine with cream cheese, corn syrup, cocoa powder, powdered sugar, and salt until smooth.
  7. Frost cooled cake layers as desired.
