Ingredients
- 1/2 cup butter (softened)
- 1/2 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup mashed ripe banana (about 2 and 1/2 medium bananas)
- 1 cup all-purpose flour
- 1/2 cup old-fashioned oats (blended into a powder)
- 1 teaspoon baking soda
- 1 & 1/2 teaspoons baking powder
- 3/4 teaspoon kosher salt
- 1/2 cup sour cream
- Optional: spices (cinnamon, nutmeg, cloves) and nuts (toasted pecans or walnuts)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan with nonstick spray or parchment paper.
- If using nuts, toast them on a baking sheet for about 5–7 minutes until fragrant, then let cool.
- In a large mixing bowl or stand mixer, beat the softened butter until smooth. Add both sugars and cream until fluffy.
- Incorporate eggs and vanilla extract into the butter mixture until combined.
- Mash ripe bananas in a separate bowl and mix into the batter.
- Combine dry ingredients: all-purpose flour, oat flour, baking soda, baking powder, and salt; fold into wet ingredients until just combined.
- Gently stir in sour cream and then fold in toasted nuts if using.
- Pour batter into the prepared loaf pan and bake for 55–65 minutes. Use a toothpick to check doneness; it should come out clean.
- Allow cooling in the pan for around twenty minutes before transferring to a cooling rack.
