  • 1/2 cup old-fashioned oats (blended into a powder)
  • 1 teaspoon baking soda
  • 1 & 1/2 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 cup sour cream
  • Optional: spices (cinnamon, nutmeg, cloves) and nuts (toasted pecans or walnuts)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan with nonstick spray or parchment paper.
  2. If using nuts, toast them on a baking sheet for about 5–7 minutes until fragrant, then let cool.
  3. In a large mixing bowl or stand mixer, beat the softened butter until smooth. Add both sugars and cream until fluffy.
  4. Incorporate eggs and vanilla extract into the butter mixture until combined.
  5. Mash ripe bananas in a separate bowl and mix into the batter.
  6. Combine dry ingredients: all-purpose flour, oat flour, baking soda, baking powder, and salt; fold into wet ingredients until just combined.
  7. Gently stir in sour cream and then fold in toasted nuts if using.
  8. Pour batter into the prepared loaf pan and bake for 55–65 minutes. Use a toothpick to check doneness; it should come out clean.
