  • 1 cup sour cream
  • 10 ounces fresh spinach
  • 1 teaspoon chopped garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese (set aside a portion for later use)
  • 1 tablespoon parsley, chopped
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan over medium heat, cook the fresh spinach until wilted. Let cool slightly and chop.
  3. In a mixing bowl, combine softened cream cheese and sour cream until smooth. Add chopped garlic, salt, pepper, parmesan cheese, and half the mozzarella. Fold in wilted spinach.
  4. Spray a baking dish with nonstick cooking spray and transfer the mixture into it. Top with remaining mozzarella.
