- 5 oz mixed greens or baby spinach
- 1 ripe avocado, sliced
- 1 cup fresh blackberries
- Honey
- Lemon juice
- Olive oil
- Salt and pepper
Instructions
- Wash the mixed greens or spinach under cold water, then drain thoroughly and place them in a mixing bowl.
- Slice the avocado in half, remove the pit, scoop out the flesh, and cut it into thin slices. Add to the bowl.
- Gently add the fresh blackberries to the mixing bowl with the greens and avocado.
- In a small bowl, whisk together honey, lemon juice, olive oil, salt, and pepper until well combined.
- Drizzle the vinaigrette over the salad ingredients in the mixing bowl. Toss gently to combine without bruising the blackberries or avocados.
- Transfer to a serving bowl or plate and enjoy immediately.
