Ingredients
- 3 and 1/3 cups flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 2/3 cup cold butter (cubed)
- 1/3 cup light brown sugar
- 1/3 cup sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 8 oz. mascarpone cheese
- 8 oz. cream cheese (softened)
- ½ cup + 2 tablespoons caster sugar
- 1 and 2/3 cups blueberries
Instructions
- Preheat oven to 350°F. Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a bowl, combine flour, baking powder, salt, brown sugar, and sugar. Cut in cold butter until crumbly.
- Mix in eggs and vanilla extract until just combined; press two-thirds of the mixture into the bottom and sides of the pan.
- For the filling, beat cream cheese, mascarpone, vanilla extract, caster sugar, and corn starch until smooth. Add eggs slowly to avoid overmixing.
- Pour half the cheesecake filling into the crust; add half of the blueberries on top. Layer remaining filling and blueberries before sprinkling leftover crumbs on top.
- Bake for about 65-75 minutes or until golden brown and a toothpick comes out clean from the center.
