  • ¼ teaspoon salt
  • 2/3 cup cold butter (cubed)
  • 1/3 cup light brown sugar
  • 1/3 cup sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese (softened)
  • ½ cup + 2 tablespoons caster sugar
  • 1 and 2/3 cups blueberries

Instructions

  1. Preheat oven to 350°F. Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a bowl, combine flour, baking powder, salt, brown sugar, and sugar. Cut in cold butter until crumbly.
  3. Mix in eggs and vanilla extract until just combined; press two-thirds of the mixture into the bottom and sides of the pan.
  4. For the filling, beat cream cheese, mascarpone, vanilla extract, caster sugar, and corn starch until smooth. Add eggs slowly to avoid overmixing.
  5. Pour half the cheesecake filling into the crust; add half of the blueberries on top. Layer remaining filling and blueberries before sprinkling leftover crumbs on top.
  6. Bake for about 65-75 minutes or until golden brown and a toothpick comes out clean from the center.
