Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a microwave-safe bowl, heat frozen blueberries for about 1 minute until soft; mash into a jam-like consistency.
- In a stand mixer, cream softened butter and granulated sugar until light and fluffy. Stir in the blueberry jam and vanilla extract.
- Gradually add the dry ingredients to the wet mixture until just combined. Fold in white chocolate chips if using.
- Scoop about 2 tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until lightly golden around the edges.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
