- 1 cup blueberries (fresh or frozen)

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a saucepan, combine blueberries, granulated sugar, and lemon juice; cook over medium heat until blueberries burst and mixture thickens (about 10 minutes). Allow to cool.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat butter and powdered sugar until fluffy. Add egg, vanilla extract, and lemon zest; mix well.
- Gradually incorporate dry ingredients into the butter mixture until just combined.
- Shape dough into 1-inch balls on the baking sheet; flatten slightly and add a spoonful of blueberry mixture on top.
- Bake for 12–15 minutes or until edges are lightly golden. Cool on a wire rack.
- Drizzle with a glaze made from whisking powdered sugar, lemon juice, and lemon zest.
