- 1 pint fresh blueberries
- 2 ripe peaches (diced)
- 2 Persian cucumbers (sliced)
- 1/2 cup crumbled feta cheese
- 3 tablespoons fresh lemon juice
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 tablespoon finely chopped basil
- Kosher salt and fresh ground black pepper to taste
Instructions
- In a large mixing bowl, combine the blueberries, diced peaches, sliced cucumbers, and crumbled feta. Gently toss to mix.
- In a jar with a lid, add the lemon juice, dijon mustard, honey, olive oil, and chopped basil. Season with salt and pepper. Shake well until combined.
- Pour the vinaigrette over the salad mixture and toss until everything is well-coated. Adjust seasoning if necessary.
- Serve immediately or chill in the refrigerator before serving.
