Ingredients
- 1 pint fresh blueberries
- 2 ripe peaches, diced
- 2 Persian cucumbers, thinly sliced
- 1/2 cup crumbled feta cheese
- 3 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 tablespoon finely chopped fresh basil
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Rinse blueberries and pat dry. Dice peaches and slice cucumbers.
- In a large bowl, combine blueberries, peaches, cucumbers, and feta; toss gently.
- In a jar or bowl, whisk together lemon juice, mustard, honey, olive oil, basil, salt, and pepper until emulsified.
- Pour vinaigrette over the salad; toss gently to coat.
- Serve immediately or refrigerate for up to three hours before serving.
