Ingredients
- 4 cups blueberries (fresh or frozen)
- ¾ cup granulated sugar
- 3 tbsp cornstarch
- Pinch of salt
- 1 tbsp lemon juice
- 2 tsp vanilla extract (optional)
Instructions
- In a saucepan over medium heat, cook the blueberries until they release their juices and soften (about 7-9 minutes).
- In a mixing bowl, whisk together sugar, cornstarch, and salt.
- Add the dry mixture to the cooked blueberries and stir well.
- Continue cooking while stirring until the mixture thickens (2-3 minutes).
- Remove from heat and stir in lemon juice and vanilla extract if using.
- Allow to cool before storing in glass jars.
