Ingredients
- 1 tbsp extra virgin olive oil
- 1 white onion (chopped)
- 1 red pepper (chopped)
- 2 zucchini (chopped)
- 6 large eggs
- ½ cup Parmesan cheese (shredded)
- ½ tsp salt
- ¼ tsp pepper
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Add chopped onions and cook for about 10 minutes until soft and golden.
- Stir in chopped red peppers and cook for an additional 5 minutes until tender.
- Add chopped zucchini along with salt and pepper; cook for another 3 minutes.
- In a separate bowl, whisk together eggs and Parmesan cheese until well combined.
- Pour the egg mixture over the cooked veggies in the skillet and let it cook on the stovetop for 3 minutes without stirring.
- Preheat oven to 400°F (200°C) and transfer the skillet to bake for approximately 15 minutes until set. Let cool slightly before slicing.
