  • ¾ cup heavy whipping cream
  • 10 cardamom pods
  • 1 ½ cups sugar
  • ¼ cup water
  • 6 tbsp butter
  • ¼ cup orange juice
  • zest of 1 orange
  • ½ tsp kosher salt
  • pinch ground cardamom

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cubed French bread with melted butter, diced pears, brown sugar, apple juice (if using), and one teaspoon of ground cardamom.
  3. In another bowl, whisk together eggs, milk, heavy whipping cream, sugar, and kosher salt until smooth.
  4. Pour the custard mixture over the bread mixture, ensuring all pieces are soaked evenly.
  5. Allow it to sit for about 15 minutes so that the bread absorbs the custard.
  6. Transfer the mixture into a greased baking dish.
  7. Sprinkle raw turbinado sugar on top if desired for added crunch.
  8. Bake in preheated oven for about 60 minutes or until set and golden brown on top.
  9. In a saucepan over medium heat, combine cardamom pods, sugar, water, butter, orange juice, orange zest, kosher salt, and a pinch of ground cardamom.
