Ingredients
- 2 pounds fresh spinach
- 1 medium onion
- 3 cloves garlic
- 2 tablespoons olive oil
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ teaspoon Italian seasoning
- Salt and pepper to taste
- 2 large eggs
- ¼ cup breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Sauté chopped onion until soft, then add minced garlic and cook for one minute.
- Gradually add spinach in batches, cooking until wilted. Drain excess liquid and let cool slightly.
- In a bowl, mix ricotta, mozzarella, Parmesan, Italian seasoning, salt, pepper, and beaten eggs until combined.
- Fold the cooked spinach into the cheese mixture and transfer to the baking dish. Sprinkle breadcrumbs on top.
- Bake for 25–30 minutes until golden brown and bubbly. Let cool before serving.
