  • 1 medium onion
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 large eggs
  • ¼ cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion until soft, then add minced garlic and cook for one minute.
  3. Gradually add spinach in batches, cooking until wilted. Drain excess liquid and let cool slightly.
  4. In a bowl, mix ricotta, mozzarella, Parmesan, Italian seasoning, salt, pepper, and beaten eggs until combined.
  5. Fold the cooked spinach into the cheese mixture and transfer to the baking dish. Sprinkle breadcrumbs on top.
  6. Bake for 25–30 minutes until golden brown and bubbly. Let cool before serving.
