- 1 lb. shrimp (peeled and deveined, tail-on)
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- 1 tablespoon fresh cilantro (or parsley)
- 2 tablespoons Thai sweet chili sauce
- 2 cloves garlic (finely chopped)
- 1/2 tablespoon honey
- Pinch of salt
- Fresh parsley for garnish
Instructions
- Soak bamboo skewers in cold water for at least 30 minutes to prevent burning.
- Rinse shrimp under cold water, pat dry, and set aside.
- In a mixing bowl, whisk together lime juice, olive oil, cilantro, Thai sweet chili sauce, garlic, honey, and salt.
- Add the shrimp to the marinade and toss to coat evenly; let marinate for at least 30 minutes.
- Preheat grill to medium-high heat.
- Thread marinated shrimp onto soaked skewers and grill for 2–3 minutes on each side until fully cooked.
- Remove from grill and serve immediately garnished with chopped parsley.
