Ingredients
- 2 – 2.5 lbs deboned skin-on chicken thighs
- 1/2 cup fresh lime juice
- 1 teaspoon fresh lime zest
- 1/4 cup olive oil
- 3 tablespoons fresh cilantro leaves, chopped
- 1 jalapeño, finely chopped
- 2 teaspoons chipotle chili powder
- 5 cloves garlic, minced
- 1 1/2 tablespoons honey
- 2 teaspoons salt
Instructions
- Prepare the Chicken: Remove bones from chicken thighs and rinse under cold water. Pat dry and set aside.
- Make the Marinade: In a large bowl, whisk together lime juice, lime zest, olive oil, cilantro, jalapeño, chipotle chili powder, garlic, honey, and salt. Reserve some marinade for basting.
- Marinate: Add chicken to the marinade and ensure it’s well-coated. Marinate in the refrigerator for at least 2 hours or overnight.
- Grill: Preheat grill to medium-high heat. Brush reserved marinade on chicken and grill for about 5 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).
- Serve: Enjoy immediately with fresh lime wedges.
