- 2 cups crushed Biscoff cookies
- 6 tablespoons unsalted butter, melted
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
- 2 tablespoons Biscoff cookie butter
- 1 teaspoon vanilla extract
- Pinch of sea salt
Instructions
- Prepare the crust: In a food processor, blend crushed Biscoff cookies until fine crumbs form. Mix in melted butter until well combined, then press firmly into a 9-inch tart pan. Chill in the refrigerator.
- Make the filling: Over low heat, combine heavy cream and chopped chocolate in a saucepan. Stir until melted and smooth. Remove from heat and mix in Biscoff cookie butter, vanilla extract, and sea salt.
- Assemble: Pour chocolate filling into the chilled crust and spread evenly. Refrigerate for at least 4 hours until set.
- Serve: Remove from tart pan and garnish with extra crushed Biscoff cookies, shaved chocolate curls, and whipped cream.
