- 1 cup butter (room temperature)
- 2 cups white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- ½ teaspoon salt
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 2 ounces chocolate almond bark
- 1 ½ cups white chocolate chips
- ½ can sweetened condensed milk (7 oz)
- ½ teaspoon mint extract
- Green food coloring
Instructions
- Cream together room temperature butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In another bowl, combine cocoa powder, salt, baking soda, baking powder, and flour; mix into the wet ingredients until a dough forms.
- Roll dough into 1-inch balls and place on a lined baking sheet. Press your thumb into the center of each ball to create a well.
- Preheat your oven to 350°F (175°C) and bake cookies for about 12 minutes. If the thumbprint disappears while baking, gently re-indent with a spoon after taking them out.
- For the filling, melt white chocolate chips and sweetened condensed milk in a saucepan over medium heat. Stir in mint extract and green food coloring.
- Spoon the filling into each cookie's center and drizzle melted chocolate almond bark on top once set.
