- 1 1/2 cups chopped strawberries
- 1 cup plain Greek yogurt
- 1 tbsp honey
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 2 tbsp coconut oil
Instructions
- In a large mixing bowl, combine chopped strawberries, Greek yogurt, honey, and vanilla extract until smooth.
- Scoop about 2 tablespoons of the mixture onto a parchment-lined baking sheet to form approximately 10 clusters.
- Freeze the clusters for 1-2 hours until solid.
- Melt chocolate chips and coconut oil in a microwave-safe bowl in short intervals, stirring frequently.
- Dip each frozen cluster into the melted chocolate using a spoon for even coating, then return them to the baking sheet.
- Freeze again for a few minutes until the chocolate hardens.
