  • 1 ½ lbs lean ground beef
  • 1 cup diced onion
  • ¾ cup bread crumbs
  • ⅓ cup broth or water
  • 2 eggs
  • 1 tsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ¾ cup ketchup
  • 1 Tbsp white vinegar

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with aluminum foil.
  2. In a large mixing bowl, combine the ground beef, diced onion, bread crumbs, broth, eggs, garlic powder, onion powder, salt, pepper, and tomato paste. Mix until well combined.
  3. Shape the mixture into a loaf on the baking sheet or pack it into a greased loaf pan.
  4. Bake uncovered for 40 minutes. While baking, mix ketchup and vinegar in a small bowl.
  5. After 40 minutes, spread the ketchup mixture over the meatloaf and return it to the oven for an additional 10 minutes.
  6. Let it rest for about 10 minutes before slicing and serving warm.
