- 1 ½ lbs lean ground beef
- 1 cup diced onion
- ¾ cup bread crumbs
- ⅓ cup broth or water
- 2 eggs
- 1 tsp tomato paste
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ¼ tsp ground black pepper
- ¾ cup ketchup
- 1 Tbsp white vinegar
Instructions
- Preheat your oven to 350°F and line a baking sheet with aluminum foil.
- In a large mixing bowl, combine the ground beef, diced onion, bread crumbs, broth, eggs, garlic powder, onion powder, salt, pepper, and tomato paste. Mix until well combined.
- Shape the mixture into a loaf on the baking sheet or pack it into a greased loaf pan.
- Bake uncovered for 40 minutes. While baking, mix ketchup and vinegar in a small bowl.
- After 40 minutes, spread the ketchup mixture over the meatloaf and return it to the oven for an additional 10 minutes.
- Let it rest for about 10 minutes before slicing and serving warm.
