Ingredients
- 2 lbs ground beef
- 1 cup breadcrumbs
- ½ cup milk
- 2 large eggs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ¼ cup ketchup
- 1 tablespoon vinegar
- 1 teaspoon salt
- ½ teaspoon black pepper
- ⅓ cup ketchup for the glaze
- 2 tablespoons brown sugar for the glaze
- 1 tablespoon apple cider vinegar for the glaze
- 1 teaspoon Dijon mustard for the glaze
Instructions
- Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large mixing bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic, ketchup, vinegar, salt, and pepper. Mix until just combined.
- Shape the mixture into a loaf and place it in the prepared pan.
- For the glaze, mix together ketchup, brown sugar, apple cider vinegar, and Dijon mustard. Spread half of the glaze over the meatloaf.
- Bake for 45 minutes; then apply the remaining glaze and bake for an additional 15 minutes until cooked through.
- Allow the meatloaf to rest for about 10 minutes before slicing.
