  • 1 cup breadcrumbs

  • 2 large eggs

  • 1 tablespoon vinegar

  • ½ teaspoon black pepper
  • ⅓ cup ketchup for the glaze
  • 2 tablespoons brown sugar for the glaze
  • 1 tablespoon apple cider vinegar for the glaze
  • 1 teaspoon Dijon mustard for the glaze

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic, ketchup, vinegar, salt, and pepper. Mix until just combined.
  3. Shape the mixture into a loaf and place it in the prepared pan.
  4. For the glaze, mix together ketchup, brown sugar, apple cider vinegar, and Dijon mustard. Spread half of the glaze over the meatloaf.
  5. Bake for 45 minutes; then apply the remaining glaze and bake for an additional 15 minutes until cooked through.
  6. Allow the meatloaf to rest for about 10 minutes before slicing.
