- 3 – 4 hard-boiled eggs
- 1/2 cup celery (chopped)
- 1/2 cup onion (finely chopped)
- 2/3 cup mayonnaise
- 1 tablespoon milk
- 1 tablespoon yellow mustard
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley (for garnish)
Instructions
- Boil the Potatoes: In a large pot, cover the potatoes with cold water and bring to a boil. Cook for about 15 minutes until fork-tender.
- Cool the Potatoes: Drain and cool the potatoes under cold water. Peel if desired and let cool completely.
- Prepare the Dressing: In a small bowl, mix mayonnaise, milk, mustard, sugar, salt, and pepper. Adjust seasoning as needed.
- Combine Ingredients: In a large bowl, mix cooled potatoes with chopped eggs, celery, and onion. Pour dressing over mixture and stir gently until coated.
- Chill Before Serving: Cover and refrigerate for at least one hour before serving to allow flavors to meld.
