Ingredients
- 2 pounds fresh clams, cleaned
- 1 can (14 oz) coconut milk
- 2 stalks lemongrass, smashed and cut into pieces
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1–2 red chili peppers, sliced (optional)
- Fresh cilantro for garnish
- Salt and black pepper to taste
Instructions
- Clean the clams by soaking them in water for 20 minutes.
- In a large pot, gently simmer coconut milk over medium heat.
- Add lemongrass, garlic, and ginger; stir for about 2–3 minutes.
- Season with fish sauce, lime juice, salt, pepper, and optional chili peppers.
- Introduce clams to the pot; cover and steam for 5–7 minutes until they open.
- Discard any unopened clams.
- Serve ladled into bowls with broth; garnish with fresh cilantro.
