Ingredients
- 3 tablespoons olive oil
- 1 tablespoon lime juice
- ¼ teaspoon salt
- 1½ cups corn (fresh or thawed frozen)
- 1½ cups cherry tomatoes (halved)
- ½ cup cucumber (finely chopped)
- 2 tablespoons fresh basil (minced)
- ⅓ cup crumbled feta cheese
Instructions
- In a small bowl, whisk together 2 tablespoons olive oil, lime juice, and salt for the dressing. Set aside.
- Heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the corn and cook for about 5–7 minutes until tender.
- Transfer cooked corn to a large mixing bowl to cool slightly. Mix in halved cherry tomatoes, finely chopped cucumber, and minced basil.
- Refrigerate until ready to serve. Before serving, drizzle with the prepared dressing and top with crumbled feta cheese.
