- 1 cup heavy cream (or half-and-half)
- 2 cups kale or spinach, chopped
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional, for heat)
- 1 tbsp olive oil (if needed, for sautéing)
- ½ cup grated Parmesan cheese (for garnish)
Instructions
- In a large pot over medium heat, brown the chicken sausage while breaking it apart. Drain excess grease if needed.
- Add the diced onion and cook until soft (3–4 minutes). Stir in minced garlic and cook for an additional 30 seconds.
- Incorporate diced potatoes and chicken broth; bring to a boil before reducing heat to simmer for about 15 minutes until potatoes are tender.
- Stir in heavy cream and chopped greens; simmer for another 5 minutes until greens are wilted.
- Season with salt and pepper to taste before serving.
