- 1 cup full-fat coconut milk
- 2 cups kale or spinach, chopped
- Salt to taste
- Black pepper to taste
- Red pepper flakes to taste
Instructions
- In a large pot over medium heat, sauté diced onions and minced garlic until fragrant (about 3-5 minutes).
- Add the sausage and cook until browned, breaking it into smaller pieces (5-7 minutes).
- Stir in the potatoes and pour in the chicken broth. Bring to a boil, then reduce heat to simmer for about 15 minutes until potatoes are tender.
- Incorporate coconut milk for creaminess and mix in the chopped greens until wilted.
- Season with salt, black pepper, and red pepper flakes to taste.
