Ingredients
- 1 lb ground turkey or chicken sausage (spicy or mild)
- 2 medium Yukon Gold potatoes, diced
- 1 medium onion, chopped
- 2 medium carrots, sliced
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup heavy cream (or plant-based alternative)
- 2 cups fresh spinach or kale
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp extra virgin olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until soft.
- Add minced garlic and cook until fragrant. Crumble in the ground turkey or chicken sausage and brown well.
- Stir in diced potatoes and Italian seasoning; mix thoroughly.
- Pour in vegetable broth and bring to a boil. Reduce heat to simmer for about 20 minutes or until potatoes are tender.
- Stir in the cream (or alternative) and add spinach or kale until wilted. Adjust salt and pepper before serving.
