- 1/2 cup milk
- 1/2 to 3/4 cup ketchup (for glaze)
- 2 tablespoons brown sugar (for glaze)
- 1 teaspoon mustard (for glaze)
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- In a bowl, mix ketchup, brown sugar, and mustard for the glaze; set aside.
- In a large bowl, combine eggs, crushed Ritz crackers, shredded cheese, milk, onion, bell pepper (if using), salt, and black pepper until mixed.
- Gently fold in the ground beef until just combined—avoid overmixing.
- Transfer to a greased loaf pan and bake for 30 minutes.
- Spread the glaze over the meatloaf and bake for an additional 30 to 40 minutes until the center reaches an internal temperature of 155 degrees Fahrenheit.
- Cool for about 15 minutes before slicing and serving.
