Ingredients
- 1 lb boneless skinless chicken breasts
- 12 oz rotini pasta
- 1 cup heavy cream
- 1 cup whole milk
- 6 oz Velveeta cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon Cajun seasoning
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1 teaspoon garlic powder
- Salt and black pepper, to taste
- 4 cloves garlic, minced
- Fresh chopped parsley, for garnish
Instructions
- Cook rotini in salted water until al dente; reserve pasta water before draining.
- In a skillet, heat olive oil and butter, then cook seasoned chicken strips until golden brown.
- Sauté garlic in the same skillet, then stir in heavy cream and milk. Add cheeses until melted.
- Combine cooked rotini with the sauce, adjusting consistency with reserved pasta water.
- Drizzle melted Cajun butter over plated servings and garnish with parsley.
