Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 3 tablespoons unsalted butter
  • 1 large yellow onion, chopped (about 1 cup)
  • 2 medium carrots, peeled and diced into ¼-inch pieces (about 1 cup)
  • 2 teaspoons garlic, minced
  • 2 rings (13 ounces each) turkey or beef sausage, sliced into ¼-inch slices
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup (31 g) all-purpose flour

  • 2 cans (15 ounces each) Great Northern white beans, rinsed and drained

Instructions

  1. In a large pot, heat vegetable oil over medium-high heat. Add sliced turkey or beef sausage and cook until browned on both sides, about 7–9 minutes. Remove and set aside.
  2. In the same pot, melt butter. Add chopped onion, diced carrots, garlic, salt, and pepper; sauté for 10–12 minutes until softened.
  3. Sprinkle flour over the vegetables and stir well for 1 minute to thicken.
  4. Gradually pour in chicken broth and whole milk, stirring until combined. Bring to a simmer.
  5. Return the browned sausage to the pot along with rinsed beans.
  6. Reduce heat to medium-low and simmer for 15–20 minutes while stirring occasionally until thickened.
