- 1 lb Ground Beef (or turkey or meat alternative)
- 1 large Onion
- 3 cloves Garlic
- 4 cups Beef Broth (or vegetable broth)
- 14.5 oz Diced Tomatoes
- 1 cup Corn
- 15 oz Black Beans
- 2 medium Potatoes
- 1 tbsp Smoked Paprika
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1 tsp Salt
- 0.5 tsp Black Pepper
- 1 cup Heavy Cream (or coconut milk)
- 1 cup Shredded Cheddar Cheese
Instructions
- Prepare ingredients by dicing the onion, mincing the garlic, and chopping potatoes into small cubes.
- In a large pot over medium heat, brown the ground beef until fully cooked.
- Add onion and garlic; sauté until softened.
- Stir in diced tomatoes, corn, black beans, potatoes, spices, and broth; combine well.
- Bring to a boil; reduce heat to low and simmer for about 20 minutes until potatoes are tender.
- Stir in cream until heated through; do not boil.
- Serve hot topped with shredded cheese.
