Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 4 cups canned crushed tomatoes
- 4 cups vegetable broth
- 1 cup tortellini (fresh or frozen)
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh basil leaves
- Grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.
- Add crushed tomatoes and vegetable broth; bring to a boil. Reduce heat and let simmer for 10 minutes.
- Stir in tortellini and cook according to package instructions (about 3-5 minutes).
- Lower heat, add heavy cream, and season with salt and pepper. Warm through without boiling.
- Serve hot, garnished with fresh basil leaves and grated Parmesan cheese.
