  • 2 large chicken breasts
  • 1/4 teaspoon garlic powder
  • Salt & pepper (to taste)
  • Flour (for dredging)
  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)
  • 8 ounces cremini mushrooms (sliced)
  • 1/4 teaspoon Italian seasoning
  • 2 cloves garlic (minced)
  • 1/2 cup dry white apple vinegar
  • 3/4 cup heavy/whipping cream

Instructions

  1. Cut the chicken in half lengthwise so you have four thinner pieces.
  2. Sprinkle them with garlic powder, then season generously with salt & pepper on both sides.
  3. Coat each piece in flour to create a nice crust during cooking.
  4. Add olive oil and 1 tablespoon of butter to a skillet over medium-high heat. Let it heat up for a few minutes.
  5. Sear the chicken for about 4-5 minutes on each side or until golden brown. Transfer to a plate once done.
  6. In the same skillet, add the remaining butter, sliced mushrooms, and Italian seasoning.
  7. Cook for about 5-6 minutes until the water from the mushrooms has been released and cooked off.
  8. Stir in minced garlic and cook for about a minute until fragrant.
  9. Add white apple vinegar and scrape up any browned bits from the bottom of the pan.
  10. Allow the sauce to bubble for about 2-3 minutes until reduced by half.
  11. Stir in heavy cream, then return the chicken to the pan.
  12. Let it cook for about 5 minutes until thoroughly cooked through and the sauce thickens slightly.
  13. Adjust seasoning with extra salt & pepper if needed before serving.
