Ingredients
- 2 large chicken breasts
- 1/4 teaspoon garlic powder
- Salt & pepper (to taste)
- Flour (for dredging)
- 1 tablespoon olive oil
- 3 tablespoons butter (divided)
- 8 ounces cremini mushrooms (sliced)
- 1/4 teaspoon Italian seasoning
- 2 cloves garlic (minced)
- 1/2 cup dry white apple vinegar
- 3/4 cup heavy/whipping cream
Instructions
- Cut the chicken in half lengthwise so you have four thinner pieces.
- Sprinkle them with garlic powder, then season generously with salt & pepper on both sides.
- Coat each piece in flour to create a nice crust during cooking.
- Add olive oil and 1 tablespoon of butter to a skillet over medium-high heat. Let it heat up for a few minutes.
- Sear the chicken for about 4-5 minutes on each side or until golden brown. Transfer to a plate once done.
- In the same skillet, add the remaining butter, sliced mushrooms, and Italian seasoning.
- Cook for about 5-6 minutes until the water from the mushrooms has been released and cooked off.
- Stir in minced garlic and cook for about a minute until fragrant.
- Add white apple vinegar and scrape up any browned bits from the bottom of the pan.
- Allow the sauce to bubble for about 2-3 minutes until reduced by half.
- Stir in heavy cream, then return the chicken to the pan.
- Let it cook for about 5 minutes until thoroughly cooked through and the sauce thickens slightly.
- Adjust seasoning with extra salt & pepper if needed before serving.
