- 2 large fresh pineapple rings

- ½ cup unsweetened shredded coconut
- Oil for frying (enough to fill the skillet)
Instructions
- 1. Heat oil in a deep skillet over medium-high heat until it reaches 350°F (175°C).
- 2. In a bowl, whisk together coconut flour, baking powder, and shredded coconut. In another bowl, beat eggs until frothy; mix with dry ingredients until combined.
- 3. Coat each pineapple ring in the batter, allowing excess to drip off.
- 4. Fry battered rings in hot oil for 2-3 minutes on each side until golden brown.
- 5. Remove from oil and drain on paper towels before serving warm.
