- 1 cup grated Parmesan cheese
- 1 cup plain or Italian-seasoned bread crumbs
- 3 cloves fresh garlic, minced
- 2 medium zucchini, sliced
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow dish, combine the grated Parmesan cheese and bread crumbs. Season the chicken breasts with salt and pepper before dredging them in the mixture until fully coated.
- Heat olive oil in a skillet over medium heat. Add the sliced zucchini and sauté for about 5-7 minutes until tender and slightly golden brown; season with salt and pepper.
- Place the coated chicken on the prepared baking sheet and bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C) and the coating is golden brown.
- Let the chicken rest for a few minutes before serving alongside the sautéed zucchini.
