  • 12 tbsp olive oil
  • 1 tbsp maple syrup
  • ½ tsp cinnamon
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried dill
  • ½ tsp dried parsley
  • ½ tsp salt
  • ½ tsp chili powder
  • ½ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp cayenne pepper
  • ¼ tsp garlic powder
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Drain and rinse the chickpeas under cool water. Pat dry with a kitchen towel and let air dry completely.
  3. Line a baking sheet with parchment paper or a silicone mat.
  4. Spread the chickpeas evenly on the baking sheet and roast for 20-30 minutes, stirring every 10 minutes until golden brown.
  5. While roasting, mix your chosen spices in small bowls.
  6. After roasting, toss chickpeas with olive oil and spice mixtures while still hot.
  7. For sweet chickpeas, drizzle with maple syrup and sprinkle with cinnamon before roasting for an additional 5-10 minutes.
