Ingredients
- 1 lb ground beef (browned)
- 2 Tbsp taco seasoning
- 1/2 onion (diced)
- 1 cup corn (frozen or canned)
- 1 can black beans (15 oz)
- 1 can kidney beans (15 oz)
- 1 can crushed tomatoes (15 oz)
- 3 cups beef broth
- 2 cups cooked rice
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet until fully cooked and drain any excess fat.
- Add all ingredients, except for cooked rice, into your crock pot: browned beef, taco seasoning, diced onions, corn, beans, tomatoes, and broth.
- Cover and cook on low for 4–5 hours or high for 2–2.5 hours.
- Stir in the cooked rice about 5 minutes before serving to warm through.
- Serve hot with desired toppings like avocado or cheese.
