Ingredients
- 1 lb. boneless, skinless chicken breasts/thighs
- 4 oz. can diced green chiles
- 15 oz. can cannellini beans (drained)
- 15 oz. can great northern beans (drained)
- 2 tbsp fresh cilantro (chopped)
- 2 tbsp lime juice
- 2 cups chicken broth
- 1 cup onion (chopped)
- 3 cloves garlic (minced)
- 1/2 tsp cumin
- 1/2 tsp oregano (dried)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp chili powder
- 8 oz. cream cheese (softened)
Instructions
- Gather all ingredients on the counter.
- In your slow cooker, combine all ingredients except the chicken; stir to mix.
- Place the chicken on top of the mixture.
- Cover and cook on low for 7 hours or high for 4 hours until the chicken is tender.
- After cooking, shred the chicken with two forks and stir it back into the chili.
- Serve hot with your choice of toppings.
