- 2 large chicken breasts
- 1 can black beans (drained and rinsed)
- 1 can corn (undrained)
- 10 ounces Rotel tomatoes with green chilis (undrained)
- 1 packet ranch seasoning
- 1 teaspoon ground cumin
- 1 tablespoon chili powder
- 8 ounces cream cheese
- ½ cup water
Instructions
- Spray the bottom of your slow cooker with nonstick cooking spray.
- Place the chicken breasts at the bottom and add black beans, corn, Rotel tomatoes, ranch seasoning, ground cumin, chili powder, and water. Mix gently.
- Add the cream cheese on top without stirring.
- Cover and cook on low for 6–8 hours or on high for 4 hours.
- Once cooked, stir well to shred the chicken and combine flavors. Serve hot with your choice of toppings.
