  • 1 can black beans (drained and rinsed)
  • 1 can corn (undrained)
  • 10 ounces Rotel tomatoes with green chilis (undrained)
  • 1 packet ranch seasoning
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 8 ounces cream cheese
  • ½ cup water

Instructions

  1. Spray the bottom of your slow cooker with nonstick cooking spray.
  2. Place the chicken breasts at the bottom and add black beans, corn, Rotel tomatoes, ranch seasoning, ground cumin, chili powder, and water. Mix gently.
  3. Add the cream cheese on top without stirring.
  4. Cover and cook on low for 6–8 hours or on high for 4 hours.
  5. Once cooked, stir well to shred the chicken and combine flavors. Serve hot with your choice of toppings.
