Ingredients
- ¾ cup Greek yogurt (or plain full-fat yogurt)
- 1 ½ tablespoon extra virgin olive oil
- 1 ½ tablespoon lemon juice
- ¼ teaspoon grated garlic
- ½ teaspoon fine salt
- ⅕ teaspoon black pepper
- 1 ½ lb cucumbers (sliced)
- ½ red onion (finely sliced)
- ¼ cup fresh dill (chopped)
- Optional garnish: 2 tablespoons parsley (finely chopped)
Instructions
- In a small bowl, combine Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper. Stir until smooth.
- Slice the cucumbers lengthwise and then into thin half-moon shapes. Finely slice the red onion.
- In a large mixing bowl, add the cucumbers, onion, dill, and yogurt dressing. Toss gently until all ingredients are well-coated.
- Serve immediately at room temperature or refrigerate until ready to serve.
