Ingredients
- 2 English cucumbers (small diced)
- 1 (12 oz) package shelled edamame (thawed)
- 1 cup chopped green onion
- 1 handful chopped fresh cilantro
- Dressing: 1/4 cup neutral oil, 1/4 cup rice vinegar, 1 tbsp tamari or soy sauce, 2 tsp toasted sesame oil, 1 tsp maple syrup, chili onion crunch to taste, minced garlic, grated ginger, salt
Instructions
- Dice the cucumbers into small pieces similar in size to the edamame. In a large bowl, combine diced cucumber with edamame, green onion, and cilantro.
- In a separate small bowl, whisk together all dressing ingredients until well combined. Adjust seasoning to taste.
- Pour the dressing over the salad mixture and toss gently until everything is evenly coated. Serve chilled.
