Ingredients
- 2 pounds shrimp (peeled and deveined)
- 1 English cucumber (small diced)
- 3 green onions (thinly sliced)
- ⅓ cup mayonnaise
- ⅓ cup sour cream
- Juice and zest of 1 large lime
- 2 tablespoons fresh dill
- 1 tablespoon Dijon mustard
- 1 garlic clove (minced)
- Salt to taste
Instructions
- In a mixing bowl, whisk together mayonnaise, sour cream, lime juice and zest, dill, mustard, garlic, and salt. Chill the dressing in the refrigerator.
- Bring a large pot of water to a boil. Add shrimp and cook for 2 to 3 minutes until pink; then transfer to an ice water bath to cool.
- Once cooled, chop shrimp into bite-sized pieces.
- In a large bowl, combine chopped shrimp, diced cucumber, green onions, and chilled dressing. Mix gently until all ingredients are well coated.
