- 2 cups crushed chocolate cookies
- ¼ cup melted butter
- 24 ounces cream cheese, softened
- ½ cup sugar
- ¼ cup melted dark chocolate
- 1 teaspoon vanilla extract
- 3 eggs
- ½ cup fresh raspberries
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine crushed chocolate cookies with melted butter and press into the bottom of a springform pan.
- In another bowl, beat softened cream cheese, sugar, melted dark chocolate, and vanilla until smooth. Add eggs one at a time until fully incorporated.
- Gently fold in fresh raspberries using a rubber spatula.
- Pour the filling over the crust and bake for about 60 minutes or until the center is set but slightly jiggly.
- Allow cooling at room temperature before refrigerating until chilled.
